Meltaway Petit Fours

September 30th, 2008 Filed under: Desserts by admin

cake

These were easy to make, but time consuming. They are worth it! You use a mini muffin tin to make the cakes. Then as you take them out of the oven you dump them directly into the powdered sugar, orange juice glaze. As you take them out of the glaze set them on a cooling rack to cool. THEY MELT IN YOUR MOUTH!

Next time I make them I am going to try chocolate cake mix with the orange juice, powdered sugar glaze. SWEET!!!!!!

Swirl Cake

cake

Usually you use cocoa to swirl around in the white cake mix, but with this recipe I used chocolate syrup. It turned out pretty good. I did have some of it stick to the bottom of the pan. So next time I will use some parchment paper on the bottom.

Blue Ribbon Sugar Cookies

January 28th, 2008 Filed under: Desserts by admin

cake

When I started out looking for a recipe for sugar cookies I wanted to find a recipe that was simple and delicious and I found it. I would not change anything in this recipe.

Preparation time: 45 minutes
Baking time: 7 minutes per pan
Makes: 6 dozen

1 c. Land O Lakes butter, softened
1/2 c. powdered sugar
1/2 c. sugar
1 egg
1/2 teaspoon vanilla
2 1/4 c. flour
1/2 teaspoon cream of tarter
1/2 teaspoon baking soda
Decorator sugars, if desired

Heat oven to 375 degrees. Combine butter, powdered sugar and sugar. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating until well mixed. Reduce speed to low; add flour, cream of tarter and baking soda. Beat until dough forms a ball.
Shape dough into 1 inch balls. Place 2 inches apart onto ungreased cookie sheets. Flatten to about 1 1/2 inches with bottom of glass dipped in sugar; sprinkle with decorator sugars, if desired. Bake for 7 to 9 minutes or until edges are lightly browned. Let stand 1 minute; remove from cookie sheets.

Lemon Bars

January 28th, 2008 Filed under: Desserts by admin

cake

I found this recipe in a cookbook that my grandmother gave me called “It’s One Hellava Cookbook”. It turned out good and so I wanted to share the recipe with everyone. A couple things to know; it is sweet, I tried just adding four cups of sugar and it turned out tart, and the crust is thick and so you could use a bigger pan.

Crust:
3 c. flour
1 1/4 c. powdered sugar
1 lb butter (not melted)

Filling:
10 eggs
3/4 c. flour
5 c. sugar
1 c. lemon juice

Mix crust ingredients well. Then press into greased 9 x 13 inch pan. Bake 15 minutes at 325 degrees. For filling, beat eggs well; add flour, sugar and lemon juice. Pour over baked crust. Bake 35-45 minutes at 325 degrees. When cool, dust with powdered sugar.
